<p>To assist the Director of Food & Beverage in the formulation of the Annual Operating Budget, determining outlet projected revenues and expenses, operating equipment, and FF&E requirements in line with the compilation of the Annual Business Plan. To ensure that the monthly forecasted Food & Beverage revenue figures are achieved while strictly adhering to established operating expenses and ensuring effective cost control. To ensure that the Restaurant is managed efficiently according to the established concept statements and that all operating and service standards outlined in the Departmental Operations Manual are consistently adhered to.
