Key Responsibilities and Duties
- Prepare and plate a variety of sushi, sashimi, maki rolls, nigiri, and other Japanese dishes according to standardized recipes and plating specifications.
- Maintain the highest standards of freshness, quality, and presentation for all seafood and ingredients.
- Craft creative and seasonal sushi offerings in alignment with the menu and guest preferences.
- Ensure proper knife work, portioning, and portion control for all products.
- Monitor and manage inventory, receive and store seafood and perishable items safely, and assist with ordering as needed.
- Adhere to food safety, sanitation, and HACCP protocols; maintain a clean and organized workspace.
- Collaborate with front-of-house and kitchen teams to ensure timely execution during service, including special requests and dietary considerations.
- Train and mentor junior kitchen staff or trainees on sushi techniques, presentation, and safety practices.
- Assist in menu development, seasonal tastings, and quality control checks to ensure consistency across all outlets.
Qualifications and Requirements
- University degree (Bachelor’s) or equivalent education; a diploma in Culinary Arts or Sushi/Fish preparation is advantageous.
- Minimum level of experience: Internship or trainee in a professional kitchen with a focus on sushi preparation; strong willingness to learn and develop specialized skills.
- Proven knowledge of seafood handling, sushi rice preparation, and traditional to modern sushi techniques.
- Ability to work in a fast-paced environment, manage time efficiently, and maintain composure during peak service hours.
- Basic understanding of food safety standards and HACCP guidelines, and willingness to obtain any required local certifications.
- Good communication skills in English; proficiency in Arabic is a plus.
- Legal eligibility to work in Saudi Arabia and willingness to relocate to the selected region.
