Key Responsibilities:

• Receive, inspect, and verify quality and quantity of all meat, poultry, and seafood deliveries.

  
  
• Perform professional cutting, trimming, deboning, filleting, and portioning.
• Prepare specialty cuts as per menu specifications and outlet requirements.
• Ensure proper labeling, dating, and storage of all products (FIFO compliance).
• Follow HACCP and local municipality food safety regulations.
• Maintain cleanliness and sanitation of butcher area, equipment, and cold rooms.
• Ensure temperature control standards are maintained at all times.
• Conduct daily checks of storage conditions and product freshness.
• Minimize waste through proper trimming techniques and yield management.
• Maintain daily production sheets and meat requisition records.
• Support monthly inventory and stock control procedures.
• Work closely with Purchasing and Cost Control departments.
• Assist in developing new menu items and specialty cuts when required.
• Ensure compliance with IHG Hotels & Resorts policies and procedures.

Key Requirements:

• Culinary Diploma or equivalent certification preferred.
• HACCP Certification (mandatory).
• Minimum 3–5 years of experience as a Butcher Chef in a 4- or 5-star hotel.
• Experience within international hotel brands preferred.

• Understanding of international cuisine requirements.

  
  

• Attention to detail and quality-focused mindset.

  
  
• Strong organizational and time management skills.
• Ability to work under pressure during high occupancy periods.
• Team player with professional communication skills.
