● Assist the Sous-Chef in supporting the culinary operations.
● To make sure that the correct quantities are made with the correct items, and that costs are kept low and within budget.
● Set up the station properly and on time for each service period.
● Notify Sous Chef of any problems or complaints as when they arise.
● Be able to work in another area when needed and take part in cross training when directed.
● Be able to assist in same day preparation and advance preparation for another station as instructed by the Sous Chef.
● To take direct Control of the Commis II, Commis III's in the section.
● To keep to the Standards of Hygiene, Safety and Sanitation as specified.
● He /She is to ensure a positive & professional working environment throughout the kitchens and upholding all culinary standards.
● Support the training and development of junior kitchen staff to operate to the required standards as established by villa Mamas.
● Abide to all hygiene/ safety procedures as per the hygiene program of VM.
● Monitor Kitchen maintenance and report any defects of operating equipment to Sous-Chef.
● Report accidents, injuries and unsafe work conditions to direct supervisors.
● Work closely with standard recipes and plate presentation in order to maintain standards of quality in production and presentation.
● Correctly date and store food, sanitize equipment and take other measures to ensure integrity and quality of food product.
● Control breakage, spoilage and cost items.
● Use equipment skillfully by following correct safe procedures e.g. knives machines.
● Make appropriate adjustments in solving problems.
● Attends meetings as required as requested by the direct superior.
● Share thoughts and rationale as appropriate to give clear understanding for action taken.
Health & Safety
● Maintain an up to date knowledge of Health & Safety procedures, HACCP.
● Ensure that all appliances, fixtures and fittings are safe and work in accordance with Health & Safety regulations.
● Adhere to all fire, first aid and accident procedures and documentation.
● Maintain a five star kitchen cleanliness rating, encourage a culture of impeccable hygiene standards, coordinate regular deep cleaning of each section.

Skills
● Minimum 1 year experience as Commis 2
