Role Description Oversee the entire production cycle of smoked meats, from raw material receiving, through preparation and smoking, to packaging and distribution, ensuring adherence to the highest quality standards at every stage. Implement and document Standard Operating Procedures (SOPs) and food safety systems (HACCP) to ensure full regulatory compliance and product specification conformity. Efficiently manage the supply chain and inventory, including (meats, spices, smoking woods), and coordinate with suppliers to ensure the quality of inputs and continuity of supply. Build and lead high-performance teams (butchers, smokers, packers), continuously developing their competencies, with close performance monitoring to ensure productivity and quality goals are met. Monitor and analyze operational and production costs, proactively working to improve efficiency and reduce waste to enhance product profitability. Lead continuous development and improvement efforts by proposing innovative products and flavors and keeping up with global best practices in the smoked meats industry. Prepare regular performance reports for senior management covering (production, quality, inventory, costs) and coordinate effectively with all relevant departments.
Qualifications A minimum of 5 years of experience in a managerial or operational role in the food sector, with direct responsibility for meat production processes. Deep and proven technical expertise in meat smoking techniques and quality management from source to plate. Strong understanding of restaurant supply chain management, food safety systems (HACCP), and food cost analysis. Currently residing in Jeddah. Leadership and analytical skills capable of managing multiple teams and making data-driven decisions.
